For the Cookies:
- 580 ml ILIADA Kalamata PDO Extra Virgin Olive Oil
- 500 g orange juice
- 30g icing sugar
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon powder
- ½ tsp clove, grated
- Orange zest, of 1 orange
- 1300g all-purpose flour
- 400g walnuts, grated
For the syrup:
- 600g water
- 800g sugar
- Lemon slices, of ½ lemon
- Orange slices, from ½ orange
- 2 cinnamon sticks
- 2 pimpinella anisum
- 150g honey
For the chocolate icing (optional):
- 150g chocolate couverture
- 150g heavy cream
- 50g glucose
